I am a wife and mother who has recently become aware of how important nutrition is...yes, this seems silly, but it REALLY just hit me! As my daughter started to eat solid food, I became sensitive to the "junk" that was out there. Ever so slowly, I discovered more and more about a more nutritious diet. Such as: Fruits and veggies are great...as long as they are organic and not plastered with pesticides (which can cause cancer and a load of other problems)--the same with meats injected with antibiotics and steroids...and diets that were never healthy while the animal was alive. So much information, so I am starting a blog to document my journey on further discovery... *Baking/cooking endeavors *New diet purchases *Possible Gardening *New nutrition Discoveries Hopefully, I can keep up because right now, I feel extremely overwhelmed with the change of living...diet and prioritizing our income (if we can do it, I assure you that YOU can do it too...believe me)! :)

It has been awhile and a lot has been going on–namely, the Lord allowed me to find another Nanny position where I can have my baby with me, so that means, we can buy my grain mill!  Now the big debate is going to be WHICH MILL?!?!?!?  So, crazy me, thinks about the future and maybe not having electricity, so I would want a manual one, right?  More work, yes, but it could be fun….and more expensive…because the one I want is made in the USA…WOO HOO!!!

The latest book I am reading that has solidified my need to be grinding my own wheat berries is Nourishing Traditions by Sally Fallon.  It is a cookbook, but it also explains everything I am trying to do with our diet and why I am doing it.  She has a part that explains fats, carbs, “Diet Dictocrats” (etc.) and what they have convinced people is true about our American Diet the last few decades that now, we just accept as the truth and norm.  GET THE BOOK–haha.  Even if you just read it, it is amazing and great.  Just reading the process of how margarine and shortening is made is enough to make me never go back…did you realize it is made with tons of chemicals and is actually gray…they just bleach and color it to make it yellow…bleck!   Due to our change of diet…I am eating substantial amount of beef, chicken, eggs, yogurt, keifer, whole milk…and guess what?!?!?!? With all that saturated fat, I have lost 3 pounds BECAUSE–Sally Fallon and Dr. Campbell McBride both explain how Americans have been lied to and organic saturated fats are essential to living.

 

I just read this to my little sister and she said, “So what are you going to bake with if you aren’t using butter?”.  Me, “Wait, wait…where do you get that I am not using butter. Butter is good for you…?”.  Lil Sis, “You just said they use chemicals and bleach it…”.   Me, ” That is margarine…see, people think margarine is butter…and if they know the difference, a lot think it is better than butter because that is what we are told”.

“Ka’ Feer” (Kefir) and Other Things

I will start by saying that I was seriously mispronouncing this word when I first read it!  I was encouraged to start making kefir due to the nutritional value of it.  Thanks to my friend Sarah, I was able to get the grains and start using it in my raw milk (it is so simple to make). I will say that it makes plain yogurt taste sweet in comparison!  I have not yet had a drink of it straight, but I have mixed some of my homemade cereal in it AND (my husband and I both think this is completely wonderful)–a FRUIT SMOOTHIE!

It has been a week now, but we now have a deep freezer stocked with about 6 months worth of grass-fed, steroid/antibiotic free beef from a local farmer. It does not taste “farmy” as I have been asked–it has so much more GOOD flavor!  We hope to stock up on Pork and Chicken come the spring from local farmers.

Yes, it is my birthday and this morning, I was eating my kefir and cereal when Jeremy brought me my present…A CHEESE PRESS!  He said that I wrote on my blog I would love someone forever if they got me one, “I figured I needed to get it for you fast so you would love me forever!”.  Yes, my husband is thoughtful like that 🙂  Now…onto spending more hours trying to figure out what I need and how to do it.  Any tips and suggestions from cheese makers would be welcome!

The Yogurt Says I Can’t

So, I was making my second batch of yogurt in the crock pot…after being out of milk and yogurt for a couple days…I was really excited, but was so tired by the evening, I forgot to add in my yogurt culture to the raw milk. I woke up in the morning to find, warm milk that was very much not yogurt.  I was told I could mix in the yogurt and try it again, but I had already put it back in the refrigerator to use it in baking somehow (I’m probably just going to make cereal this weekend).

Because of this mishap, I do not have enough cream on the milk left to make butter because I had to use more milk to make my third batch of yogurt–which is yummy, I might add. I am excited to get my pure maple syrup from a local farm on Sunday and mix it in my yogurt (A friend told me that it is pretty amazing).

My next short topic is SEASONING AN IRON SKILLET.  Doesn’t seem too complicated, right? I went off a blog that suggested oiling the pan with bacon grease on 350 degrees for an hour.  After an hour, my pan was icky, sticky!  She said this happens to her, so she burns it off with heat?  Well, the bottom inside of my black iron is now a brown color…I think I did something wrong.  I went ahead and took someone else’s advice and lathered it with bacon grease again and put it in the oven on 250 for 3 hours. I then let it cool and wiped it out.  I repeated the whole process 2 more times and I am currently pleased with the results. I made eggs yesterday and they did not stick to the pan at all (Before I seasoned it, even with bacon grease or butter, they would burn on the pan which led me to the conclusion it needed re-seasoned).

 

 

 

 

 

 

 

 

Although my week seemed like it was turning into a tragedy, it hasn’t ended too badly.  I am thankful that my family seems to be almost completely healthy (and yes, I attribute it to the Lord bringing probiotics our way because most people who got sick about the time we did are still sick)! I am also so very thankful that I have milk to ruin yogurt and an iron skillet with which to burn food.

Who Says I Can’t?

So who says that you cannot take on the world when you are sick?!  My husband keeps trying to encourage me that it will take awhile to build our immune systems up…and with my lack of sleep 2 nights in a row, I figure that will crash anyone (my daughter has been pretty sick).  I am going to be making an olive oil/garlic mixture to put in our ears (if anyone knows of more recipes, do leave a comment, please)!

I have also been playing with the idea of getting my Master’s Degree in Nutrition, but even Liberty Online costs over $20,000…so that won’t be happening for quite awhile due to paying on the husband’s MS right now 😉

It is official though, I WILL learn how to make cheese!  I love cheese and even when it isn’t organic cheese, it is still outrageously priced.  Mozzarella will be my first attempt (it is suppose to be easier and we eat pizza every week), but I am not sure when I will start due to everything else going on right now.  If anyone would like to get me a cheese  press, I will love you forever (though mozzarella does not require one since it is a softer cheese)? 🙂  I welcome any tips and advice people have on cheese making–thanks!

IT WORKED!

What a terrible early morning I had…and it was not because my daughter woke up crying…I was the one wanting to cry! I went to bed with a pretty throbbing headache and woke up at 2am to some of the most excruciating throbbing ever!  I could barely breathe out my nose, I had junk running down my throat, and my ears were starting to feel completely “clogged”.  The throbbing in my head made my teeth hurt to the point I wondered if I had a toothache.  I laid there in misery for an hour before remembering in the GAPS book that for babies, you are to put the Probiotic powder on their tongue before bed and let it dissolve, so the “good bacteria” can work in that area of the body and kill the bad bacteria that is thriving.  I got my adult dosage pill AGAIN and instead of breaking it open, I let it dissolve on my tongue while I was in bed.  It was only within seconds of feeling the capsule break that my nasal passages cleared and I could hear popping in my ears as they opened.  This sounds unbelievable, but I had to write about it because I was pretty amazed.  It did not take my headache away and my left ear still feels like a little something is in it, but everything else is pretty much fine besides blowing my nose once in awhile. AMAZING!  So guess what my daughter got before she went down for her nap today?  Yes, her probiotic powder on her tongue–and she took it like a bigger girl than her Mommy 🙂

 

Oh, I read some bad reviews on different people who have taken probiotic powder, but from what I could tell, they were using it incorrectly (taking too high dosages; trying to get it to work faster…and on an empty stomach which my particular probiotic brand does not recommend).  You can may $16 for something natural or end up paying that or more for some meds that either mask your symptoms or kill ALL the bacteria leaving room for more infections…I personally choose my route for now 🙂

As I Stand Washing Dishes…

So I was just at my sink washing up some dishes…where I always use that time to think and/or pray to the Lord.  I’ve realized the last couple of days how enthusiastic I have been over this whole “changing the way we eat” deal. I have probably come across extremely strong to some friends and family.  I do not mean to tell them they are “sinning” by not eating the way we are choosing, but I feel like their health is at stake by not eating properly and I do not want to see them end up with health problems in the future. WHY is it that I have been so vocal and forward about physical health?  How many times have I just opened my mouth and shared about what is really important in this life:  the NEED to realize that you are a sinner in need of the blood of Christ to cover your sins so that you can stand before your Creator and have a relationship with Him?  It is a little disconcerting knowing that some friends and family will think I am a little “nutty” or even pious by trying to eat healthy.  This should not bother me because I believe it is the right thing to do. Just as I should be open about the love and salvation of my Savior–regardless of how people may treat me or think I am “crazy” because of it.  I read through Romans 8 today and was encouraged by what Paul wrote towards the end of the chapter–well, the whole chapter, but I am just typing the last part!

“What then shall we say to these things? If God is for us, who can be against us? He who did not spare his own Son but gave him for us all, how will he not also with him graciously give us all things? Who shall bring any charge against God’s elect? It is God who justifies. Who is to condemn? Christ Jesus is the one who died–more than that, who was raised–who is at the right hand of God, who indeed is interceding for us. Who shall separate us from the love of Christ? Shall tribulation, or distress, or persecution, or famine, or nakedness, or danger, or sword? As it is written,

‘For Your sake we are being killed all the day long; we are regarded as sheep to be slaughtered.’

No, in all these things we are more than conquerors through Him who loved us. For I am sure that neither death nor life, nor angels nor rulers, nor things present nor things to come, nor powers, nor height nor depth, nor anything else in all creation, will be able to separate us from the love of God in Christ Jesus our Lord (vv31-39).”

I need to remember to keep my priorities straight. Just like with eating healthy, I am not benefitting from telling people about how they can eat healthy…I am not “selling” something to them…just telling them what I know and have experienced.  Sometimes, I feel that people will think I am “selling” something when I am trying to share the love of Christ with them.  There is no selling; no strings attached. You can never be and will never be good enough to get to Heaven, God is not asking you to give money to the church because that won’t get you to heaven either.  He is asking you to recognize that you have sinned against Him and are desperately in need of the salvation His Son offers you through His shed blood sacrifice on your behalf.

My Savior allowed Himself to die and rise again to show His power of death because He loves you and wants you to come to Him in repentance–realizing there is no other way to live physically or spiritually without Him–no strings EVER attached!

GAPS?

I just finished reading “Gut and Psychology Syndrome” by Dr. Natasha Campbell-McBride.  Wow.  Though I do not agree with everything she has to say, there is so much helpful information…even shedding light on lies the government and food  industry have been telling us for the last century.  Before you write me off as a quack (which I know is how I am sounding), read the book.  Take it or leave it, it has amazing information.  Her main focus is sharing how eating the proper foods can greatly improve the health of people with autism, schizophrenia, dyslexia, depression, etc.   It is EXTREME, but she has seen thousands improve under her care (including her son).  I believe there is a lot of wisdom to be gleaned and though I am not going straight on her diet, I will be following principles from it.  I can only ask that you read it…if you think you are going through a boring part (which could possibly be all of it for you), just read it anyway 😉  I would much rather be informed on how to keep myself and my family healthy than to eat however I want and deal with the consequences later.  God is ultimately in control, but He does expect us to be responsible.  I think what really hit me was having to be responsible for another human being (my daughter).  It has made me interested in researching–whereas before, I would not have given it a second thought, really.  Speaking of my baby, she even mentioned a part where a colicky baby could have to do with the mother’s diet…especially if she consumes dairy products.  I had the page book marked to do a direct quote, but it was taken out by a rascal earlier, so I need to find it.

Funny story before I end this (it wasn’t funny at the time and maybe you had to be there), but I took Dr. Campbell McBride’s advice and put my probiotic powder on my tongue–with the intention of going right to sleep and letting it kill bacteria gathered in my Eustatian Tube, but as soon as it hit my tongue, I started gagging and ran to the kitchen to drink copious amounts of water.  I don’t think I can do it again…definitely not for the faint of heart.
